I have lots of yacon crowns to grow yacon from. This juicy South American root crop is crisp and refreshing - it's sometimes called an underground pear. It's reportedly good for your digestion and, although sweet, is okay for diabetics, I'm told. I use it in fruit salad or by itself on cereal and also cook it in stir fry, stews or roast vegetables.
